Oven Operator
Prerequisite:  (12 hour (6 PM – 630AM) shift


Essential Duties and Responsibilities:
  • Responsible for building a well-trained team which is passionate about safety, quality, efficiency, and company success.
  • Coaching Mixers and Pre-scalers to ensure batter requirements are being met
  • Utilize "troubleshooting guide" to train Mixers and Pre-scalers to ensure excellent quality of pancakes and waffles to include color, completeness, temperature, moisture
  • Responsible for timely and effective communication with Maintenance, Lead Mixer and Shift Management 
  • Perform related duties as assigned by supervisor
  • Meet or exceed company expectations for production performance to maximize sale
  • Responsible for maintaining all systems, settings and procedures to ensure top quality product while reducing down-time and product waste.
  • Responsible for ensuring the correct recipe & settings are in place on the griddle

  • Must be willing to work weekends and overtime when needed
  • Assist Maintenance during breakdowns if necessary
  • Responsible for the management of the weight / deposit control system
  • Responsible for proper adjustment of the temperature control system
  • Responsible for the management of the speed controls
  • Manages the correct timing, volume and positioning of the depositor
  • Responsible for properly changing pistons and valves on depositor as needed.
  • Responsible for cleaning entire area including underneath the griddle and conveyors through the entrance of the freezer tunnel
  • Check temp of plates and keep plates completely clean prior to cycling back through the oven
  • Check batter temp and weight of finished product every 30 minutes on every row
  • Maintain depositor arm is in the right position and functioning properly for each batch
  • Properly utilize labor resources to improve efficiency, minimize labor expense and reduce waste
  • Ensure effective communication between all staff and management
  • Review all paperwork throughout shift to ensure accuracy and completeness
  • Review all entries in Plex and ensure notes are entered as required
  • Coordinate with maintenance to determine length of downtime to prioritize idle time functions such as cleaning, organizing, and reworks
  • Responsible for timely and efficient set up of oven and spray system during start-up
  • Assist with assembly of depositor and cleaning of depositor at start-up, during maintenance and at change overs
  • Maintain a clean work environment throughout shift and completely clean area prior to shift change to ensure an effective hand off
  • Monitor performance of griddle. Identify and communicate problems which require assistance to
  • Maintenance immediately.

Education and/or Work Experience Requirements:
  • Ability to read, write, and communicate effectively in English
•     Intermediate mathematical skills are required
•     Computer skills – ability to learn specific software programs required
•     Moderate mechanical aptitude is required
•     Positive attitude and ability to train new team members


Physical and Safety Requirements: 
  • Must be able to lift and carry up to 50-70 lbs.
  • Complies with Good Manufacturing Practices (GMP’s) and all other food safety requirements
  • Complies with Personal Protective Equipment (PPE’s) requirements
  • Reports any food safety problems or potentially unsafe practices/conditions to lead or supervisor
  • Constant walking and standing on hard concrete surfaces
  • Frequent bending, stooping, squatting, pushing, lifting and climbing
  • Position will require working in very hot and cold conditions
  • Other conditions include flour dust, wet floors, occasional smoke and fumes if product burns
